Because cups measure volume rather than mass, the same 50g weight occupies very different volumes depending on the ingredient's density. 50g of all-purpose flour (0.40) fills the cup loosely as fine particles trap air, while 50g of honey (⅛ cup) sinks to the bottom of the cup as a dense liquid.
The formula is simple: cups = grams ÷ grams-per-cup density. For 50g of flour: 50 ÷ 125 = 0.40 cups. For 50g of sugar: 50 ÷ 200 = 0.25 cups. Densities are measured using the spoon-and-level method, where the ingredient is spooned into the cup and levelled with a straight edge — the most reproducible home-kitchen technique.
